Proudly born and raised in Osaka, the insight gained from living abroad made me deeply appreciate my two thousand year-old intact culture to new plateaus and ignited a dream to share it with the world.
Even though completing a Masters in Creative Arts at the Osaka University of Arts ,I found my passion was always leaning to food. If you've ever been to Japan you'll understand the food is an artful institution - from the space to the plates to the intimacy with chef and client. It was my world.
As a licensed Japanese chef, I have been immersed in and practising our culinary arts for a decade now. Formulating dish creations in Michelin-rated izakaya kitchens & it was during this time my craft and conceptualisation with playing with Japanese ingredients benchmarked.
In early 2020 I moved to live in Vancouver to expand my repertoire and further my cooking craft. While living in Vancouver I came to the realisation true Japanese cuisine is internationally notorious for benchmarking food experiences.
My experience with Japanese cuisine abroad to rarely matched the standard in Japan. Why?
